An interview with The Professional

We asked James why ‘Fish & Chips’ is one of his favourites?
“It’s probably the healthiest take away food one can have and is evocative of my childhood. My parents owned two ‘Fish & Chip’ shops in NZ and I used to stand on a fruit box and help in the shop.
So what is James’s favourite Greek dish?
“Octopus done any way but more especially sun-dried then char grilled served with Ouzo.”
So where’s home for James Konstantinidis and what does he miss about home?
“I have three countries I can call home, the country of my birth New Zealand ( I miss the greenness the clean air and of course the sheep) the country of my heritage which I now call home and my adopted country Australia where I spent most of adult life. I miss the irreverent sense of humour and the ease of the Australians.”
Which begs the question about how Greece became his third home?
“I ended up in the Motherland, in Athens on the rebound from a relationship.” Aren’t we lucky
We at The Wee Dram love our music, tell us who your favourite all time band is?
“Led Zeppelin because they were probably the best heavy rock band of my teens. I have lost count of how many times I have listened “to whole lotta love” at excruciatingly loud volume.
Finally tell us about The Wee Dram?
“I love the Wee Dram because it provides a little oasis of something different in Athens and of course I have made many friends here. I’m happy to see that Ross and his team are prevailing in tough times.”
We are honoured to have such a experienced Chef in our kitchen, don’t miss your chance to try this British classic!
